Stevia-Sweet Biscotti
Stevia-Sweet Biscotti
Enjoy these sugar-free biscotti sweetened with Stevia for an easy coffee break
Ingredients
- 1 cup All Purpose Flour
- 12 packets Lantic Rogers Stevia
- 1/4 cup Unsalted Butter
- 1 Egg
- 3/8 teaspoon Baking Powder
- 1/8 teaspoon Salt
- 3 tablespoon Walnut Pieces
- 1/4 teaspoon Vanilla Extract
Directions
- Preheat the oven to 350 °F (175°C). Line two baking sheets with parchment paper.
- Beat butter first, and then add Lantic Rogers Stevia. Continue to beat until light and fluffy.
- Add the egg (at room temperature). Mix until just combined. Add vanilla extract
- In another bowl, sift together the flour, baking powder and salt. Add walnut.
- Add dry ingredients to the egg mixture. Stir with a spoon and as the dough comes together, knead by hand.
- Roll the dough into a log about 15 inches long. Place logs onto cookie sheets. Flatten the logs out until they are about 3 inches wide with a slight hump going down the middle.
- Bake for 25 minutes in the preheated oven or until firm. Remove the loaves from oven and let them cool.
- Decrease oven temperature to 325F (163C).
- Cut the loaves into diagonal slices 1/2 inch wide, place the slices onto the cookie sheets and return to the oven.
- Toast on one side for about 10 minutes, and then turn them over to bake the other side for about 10 minutes.
- Remove from oven and place on a wire rack to cool for 15 minutes before serving.
