Stevia-Sweet Blueberry Muffins
Stevia-Sweet Blueberry Muffins
Enjoy these sugar-free blueberry muffin sweetened with Stevia for an easy breakfast or afternoon tea
Ingredients
- 1 1/2 cup All Purpose Flour
- 33 packets Lantic Rogers Stevia
- 1/3 cup Unsalted Butter
- 1 large Egg
- 1 teaspoon Baking Powder
- 1/8 teaspoon Salt
- 2/5 cup Milk
- 3/4 cup Frozen Blueberries
Directions
- Preheat the oven to 325 °F (163°C). Line a muffin tin with paper cases
- Add half of the Lantic Rogers Stevia into milk, mix well
- In the bowl of an electric mixer fitted with a flat beater attachment, cream butter first, then add the other half of the stevia on low speed. Beat until light and fluffy.
- Slightly chop frozen blueberries
- Add the egg (at room temperature). Mix until just combined
- Gradually stir in milk and sweetener mix
- In another bowl, sift together the flour, baking powder and salt
- Make a well in centre of dry ingredients; pour in liquid and stir just until moistened
- Gently fold in blueberries
- Spoon into prepared muffin cups, filling to top
- Bake in the middle of the oven for 25 to 30 minutes or until a toothpick comes out clean
- Remove from oven and place on a wire rack to cool for 15 minutes before serving
